Founded on the good values and quality ingredients produced by the historic Baltimore Shilling Canning Company, Chef Shilling has opened up a restaurant sharing the same namesake that has belonged to the family company for years. Since the 1930s, Shilling Canning Company has been a staple in our region and this new addition to their repertoire doesn’t disappoint. 

The goal of the restaurant, located not far from The Residences at Eastern Market, is to highlight only the freshest local ingredients sourced from farmers, fishermen, and other regional producers. The outcome is decadent cuisine with bold, unique flavors that are changed out daily with a rotating menu based upon what is found in the area for inspiration. 

Start out with the raw bar for the table. You can grab the shellfish platter to try a little bit of everything! Then, depending on the day there will be a selection of family-style large plates, small plates, and side dishes. Recent favorites include crab fritters, autumn olive pork and mushroom tart. Pair it with a craft cocktail for a meal you won’t forget!
